When people ask me where to find a relaxing waterfront dining experience in Vancouver, I often recommend restaurants that combine great food, exceptional hospitality, and memorable views. During a recent visit to P2B Bistro & Bar, located inside the Pinnacle Hotel Harbourfront, I was reminded why this property continues to be one of my favorite places to stay and dine in the city.

As someone who has spent years exploring Vancouver’s restaurant scene, I can say that some restaurants stand out not because they are trendy, but because they consistently deliver a quality experience. For Robert Lawrence Vancouver, P2B Bistro & Bar is one of those places.

Located along beautiful Coal Harbour, the restaurant offers stunning waterfront views, comfortable surroundings, and a welcoming atmosphere that immediately makes guests feel at home. Combined with outstanding hospitality and a memorable entrée, it created a dining experience worth sharing.

One of My Favorite Vancouver Hotels

Before talking about the food, it’s worth mentioning the hotel itself.

The Pinnacle Hotel Harbourfront has long been one of my favorite places to stay in Vancouver. The location is difficult to beat, offering convenient access to downtown, the waterfront, Stanley Park, and many of the city’s most popular attractions.

What keeps me coming back, however, is the overall experience. The property consistently delivers excellent service and a welcoming atmosphere that makes every visit enjoyable.

That same level of hospitality carries directly into P2B Bistro & Bar.

From the moment I arrived at the restaurant, the staff were friendly, attentive, and genuinely hospitable. In today’s hospitality industry, authentic service can be difficult to find, which makes it even more noticeable when you experience it.

First Impressions of P2B Bistro & Bar

The restaurant immediately impresses with its views.

Large windows overlook Coal Harbour, allowing diners to enjoy one of Vancouver’s most scenic waterfront settings. Boats move through the marina while the North Shore Mountains provide a spectacular backdrop that feels uniquely Vancouver.

The dining room itself is comfortable and inviting. Rather than feeling overly formal, the atmosphere encourages guests to relax and enjoy the experience.

Whether you’re a hotel guest, a local resident, a business traveler, or a visitor exploring Vancouver, the setting works well for almost any occasion.

While the views certainly contribute to the experience, the food ultimately became the highlight of my evening.

The Braised Beef Short Rib

For my entrée, I ordered the Braised Beef Short Rib, served with whipped potatoes, asparagus, gremolata, and mushroom ragout.

From the moment it arrived, I knew I had made the right choice.

The presentation was clean and inviting, with the short rib positioned as the centerpiece of the plate. The beef was beautifully prepared and cooked exactly as a braised short rib should be.

The meat was exceptionally tender and pulled apart effortlessly with a fork.

Slow braising had developed deep, rich flavors throughout while preserving a moist texture that remained consistent from the first bite to the last. Every bite delivered the type of comfort-food satisfaction that makes braised short rib one of my favorite dishes when executed properly.

What stood out most was the balance.

The whipped potatoes provided a creamy foundation that paired naturally with the braising juices. The mushroom ragout added earthy complexity and complemented the richness of the beef without overpowering it.

The asparagus introduced freshness and texture, while the gremolata contributed brightness that helped tie the entire dish together.

Braised short ribs can sometimes feel overly heavy, but this preparation remained balanced and enjoyable throughout the meal.

The portion size was generous, making it a satisfying entrée that delivered both quality and value.

For Robert Lawrence Vancouver, the Braised Beef Short Rib was unquestionably the standout dish of the evening and something I would gladly order again during a future visit.

Outstanding Hospitality

While the food was excellent, one of the aspects that impressed me most was the hospitality.

The staff at P2B Bistro & Bar were exceptional throughout the evening.

Every interaction felt genuine, professional, and welcoming. The team did an outstanding job of making guests feel comfortable without ever becoming intrusive.

Service was attentive, questions were answered promptly, and the pacing of the meal felt natural from beginning to end.

Great food is important, but great hospitality is often what guests remember most.

That level of service is one of the reasons I continue returning to both the Pinnacle Hotel Harbourfront and P2B Bistro & Bar.

The people genuinely care about the guest experience, and it shows.

Dining with a View

One of the advantages of dining at P2B is the location.

Coal Harbour remains one of Vancouver’s most desirable waterfront neighborhoods, and the restaurant offers front-row views of the harbour and surrounding mountains.

Throughout dinner, I found myself repeatedly looking out the windows and appreciating the scenery.

What I particularly appreciate is that P2B does not rely solely on the view.

Many waterfront restaurants can become tourist destinations because of their location alone. P2B succeeds because it pairs the scenery with quality food and exceptional service.

The view enhances the experience rather than carrying it.

Value and Overall Experience

Vancouver offers no shortage of dining options, especially near the waterfront.

What separates P2B Bistro & Bar from many competitors is consistency.

The restaurant focuses on quality ingredients, thoughtful preparation, professional service, and creating an enjoyable experience for guests.

There is no need for gimmicks when the fundamentals are executed this well.

Whether you’re staying at the hotel or simply searching for a quality waterfront dining experience, P2B delivers an evening that feels both comfortable and memorable.

Final Thoughts

For Robert Lawrence Vancouver, P2B Bistro & Bar continues to be one of the more enjoyable waterfront dining experiences in the city.

The combination of beautiful Coal Harbour views, outstanding hospitality, and an excellent Braised Beef Short Rib made this visit particularly memorable.

The Pinnacle Hotel Harbourfront remains one of my favorite Vancouver hotels, and P2B remains one of my favorite harbour-view restaurants.

If you’re looking for a restaurant that combines scenery, service, and a well-executed menu, P2B Bistro & Bar deserves a place on your list.

I will certainly be returning.
